Hand slaughtered vs machine slaughtered halal
Hand slaughtered halal means a Muslim slaughterer cuts each animal or bird individually with a knife while saying God's name. Machine slaughtered halal, used mostly for chicken, cuts birds on a moving line with a rotating blade. The main zabiha certifiers in North America and the UK accept only hand slaughter.

Why machine slaughter exists
Large poultry plants process thousands of birds an hour. HMA describes machine slaughter as the method "typically used to slaughter poultry". Some halal standards accept it if a Muslim says God's name at the start of the line or monitors it. Others do not.
Who accepts what
HMA (Canada): machine slaughter is "unacceptable"; each bird must be slaughtered manually with a knife. HFSAA (US): slaughter must be "by the hand of the Muslim slaughterer, and not by machine". HMS (US): certifies hand slaughtered meat only. HMC (UK): mechanical slaughter "will not serve to conduct a Halal slaughter".
Some Muslims and scholars accept machine slaughter, and this is a long running debate rather than a settled question. Muzzmi does not take a side. It shows which certifier, if any, stands behind each place.
How to know which one a restaurant uses
Ask which supplier and which certifier the chicken comes from, then check that certifier's standard. A restaurant on the list of HMS, HFSAA, HMA or HMC serves hand slaughtered meat for the items certified.
